  • 4 pieces chicken thighs bone-in, skin-on
  • 2 tablespoons olive oil for searing
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 cup chicken broth low sodium
  • 1 cup mixed vegetables carrots, peas, and corn

Method
 

Cooking Chicken Thighs
  1. Preheat the oven to 400°F (200°C).
  2. Season the chicken thighs with salt, pepper, garlic powder, and paprika.
  3. In a skillet, heat olive oil over medium-high heat. Sear the chicken thighs skin-side down for 5-7 minutes until golden brown.
  4. Flip the chicken thighs and sear the other side for an additional 5 minutes.
  5. Add chicken broth and mixed vegetables to the skillet.
  6. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).
  7. Remove from the oven and let rest for 5 minutes before serving.
