Ingredients
  

Chicken Marinade
  • 1 lb chicken breast cut into strips
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 tbsp vegetable oil
  • 1 tbsp lime juice
  • 2 cloves garlic minced
  • 1 tbsp ginger grated
  • 1 tsp curry powder
Peanut Sauce
  • 1 cup peanut butter smooth
  • 1/4 cup soy sauce
  • 1/4 cup coconut milk
  • 2 tbsp brown sugar
  • 1 tbsp lime juice
  • 1 tsp red pepper flakes optional for heat
  • 1 clove garlic minced

Method
 

Prepare Chicken
  1. In a mixing bowl, combine soy sauce, brown sugar, vegetable oil, lime juice, garlic, ginger, and curry powder. Add chicken strips and marinate for at least 30 minutes.
  2. Thread marinated chicken onto skewers.
Make Peanut Sauce
  1. In a bowl, whisk together peanut butter, soy sauce, coconut milk, brown sugar, lime juice, red pepper flakes, and garlic until smooth.
Grill Chicken
  1. Preheat the grill to medium-high heat. Grill chicken skewers for about 5-7 minutes on each side or until fully cooked.
Serve
  1. Serve grilled chicken skewers with peanut sauce on the side for dipping.

Notes

For best flavor, marinate the chicken overnight. Adjust the spice level of the peanut sauce by adding more or less red pepper flakes.
