Gather all ingredients; chop the onion and mince the garlic.
Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper; sear until golden brown on both sides (about 4 minutes each). Remove from skillet.
In the same skillet, sauté onions and garlic until soft (about 3 minutes).
Pour in the Riesling wine, scraping up bits from the pan; simmer for 5 minutes.
Add heavy cream and chicken broth; stir well and simmer for an additional 10 minutes.
Return chicken to the skillet, add thyme, and cook until heated through (about 5 minutes).
Serve hot with rice or bread.
