Ingredients
  

  • 4 boneless skinless chicken breasts (about 1.5 lbs)
  • 2 tbsp olive oil
  • 1 medium onion finely chopped
  • 4 cloves garlic minced
  • 1 cup dry or semi-sweet Riesling wine
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • Fresh thyme and parsley for garnish

Method
 

  1. Gather all ingredients; chop the onion and mince the garlic.
  2. Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper; sear until golden brown on both sides (about 4 minutes each). Remove from skillet.
  3. In the same skillet, sauté onions and garlic until soft (about 3 minutes).
  4. Pour in the Riesling wine, scraping up bits from the pan; simmer for 5 minutes.
  5. Add heavy cream and chicken broth; stir well and simmer for an additional 10 minutes.
  6. Return chicken to the skillet, add thyme, and cook until heated through (about 5 minutes).
  7. Serve hot with rice or bread.
