Ingredients

  • 4 boneless skinless chicken breasts (about 1.5 lbs)
  • 1 cup all-purpose flour
  • 1/2 cup fresh lemon juice about 2-3 lemons
  • 1/4 cup capers drained
  • 4 tablespoons butter
  • 1 cup low-sodium chicken broth
  • 3 cloves garlic minced

Method

  1. 1. Prepare the Chicken: Place chicken breasts between plastic wrap and pound to ½ inch thick for even cooking.
  2. 2. Dredge in Flour: Lightly coat each chicken breast in flour, shaking off excess.
  3. 3. Sauté the Chicken: In a skillet over medium-high heat, melt 2 tablespoons of butter. Cook chicken for about 3-4 minutes per side until golden brown and cooked through. Remove from skillet and keep warm.
  4. 4. Make the Sauce: In the same skillet, add garlic and sauté for about 30 seconds. Pour in chicken broth and bring to a simmer; stir in lemon juice and capers.
  5. 5. Combine and Serve: Return chicken to the skillet, coating with sauce for about a minute on low heat.
  6. 6. Finishing Touches: Plate the dish, garnishing with fresh parsley if desired.
