Ingredients
  

Pasta and Chicken
  • 8 oz penne pasta or any pasta of choice
  • 2 cups grilled chicken breast sliced
Salad Base
  • 4 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1/2 cup parmesan cheese shredded
  • 1/4 cup croutons
Dressing
  • 1/2 cup Caesar dressing store-bought or homemade
  • 1 tbsp lemon juice freshly squeezed

Method
 

Prepare the Pasta
  1. Cook the penne pasta according to package instructions until al dente. Drain and set aside to cool.
Grill the Chicken
  1. Season the chicken breasts with salt and pepper. Grill over medium heat for about 6-7 minutes on each side or until fully cooked. Let rest before slicing.
Assemble the Salad
  1. In a large mixing bowl, combine the chopped romaine, halved cherry tomatoes, cooked pasta, sliced grilled chicken, and croutons.
  2. In a separate bowl, whisk together the Caesar dressing and lemon juice. Pour over the salad and toss to combine.
  3. Sprinkle with shredded parmesan cheese before serving.

Notes
