Servings: 4 servings

Ingredients

  • 4 pieces chicken thighs (bone-in, skin-on)
  • 1 cup buttermilk (for marinating)
  • 1 cup all-purpose flour (for coating)
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 cups vegetable oil (for frying)
  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 large eggs (beaten)
  • 1.5 cups milk
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup maple syrup (for drizzling)
  • 1/4 cup butter (melted)

Method

  1. Combine buttermilk, paprika, garlic powder, onion powder, salt, and pepper in a mixing bowl. Add the chicken thighs and let them marinate for at least 30 minutes.
  2. Mix the flour with salt and pepper in another bowl. Dredge each marinated chicken piece in the seasoned flour mixture, ensuring an even coating.
  3. Heat vegetable oil in a frying pan over medium-high heat. Carefully add the coated chicken thighs and fry for about 15-20 minutes until golden brown and cooked through.
  4. Whisk together the all-purpose flour, sugar, baking powder, and salt in a mixing bowl to create the dry mix for your waffles.
  5. Combine the beaten eggs, milk, vegetable oil, and vanilla extract in another bowl. Mix these wet ingredients into the dry ingredients until just combined, being careful not to overmix.
  6. Preheat your waffle iron according to the manufacturer’s instructions. Pour the batter into the iron and cook until golden brown, usually taking just a few minutes.
  7. Assemble your dish by placing a fluffy waffle on a plate, topping it with a piece of fried chicken, and drizzling with maple syrup and melted butter.
