Ingredients
  

  • 2 cups fresh cherries pitted and chopped
  • 1/2 cup red onion finely diced
  • 1/4 cup cilantro chopped
  • 2 tbsp freshly squeezed lime juice
  • 1 jalapeño pepper finely chopped (seeds removed for less heat)
  • 1/4 tsp salt

Method
 

  1. Wash and pit the cherries; chop them into bite-sized pieces.
  2. Finely dice the red onion and set aside.
  3. Remove seeds from the jalapeño if desired and finely chop it.
  4. In a bowl, combine cherries, red onion, jalapeño, and cilantro.
  5. Add lime juice and salt; mix gently until well combined.
  6. Chill in the refrigerator for at least 30 minutes before serving.
