Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar packed
  • 1 large egg
  • 1 teaspoon vanilla extract
Add-ins
  • 1/2 cup dried cherries chopped
  • 1/2 cup pistachios chopped
  • 1/2 cup powdered sugar for rolling

Method
 

Prepare the Dough
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In another bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chopped dried cherries and pistachios.
Bake the Cookies
  1. Using a cookie scoop, portion out the dough and roll into balls.
  2. Roll each ball in powdered sugar until well coated.
  3. Place the cookie balls on the prepared baking sheet, spacing them about 2 inches apart.
  4. Bake for 10-12 minutes, or until the edges are set and the tops are crinkled.
  5. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
