Cherry Amaretto Tiramisu

A delightful twist on the classic tiramisu, featuring layers of coffee-soaked ladyfingers, creamy mascarpone, and a hint of cherry and amaretto liqueur.

Ingredients
  

For the Tiramisu
  • 1 cup mascarpone cheese
  • 1 cup heavy cream whipped to soft peaks
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup amaretto liqueur
  • 1 cup strong brewed coffee cooled
  • 1 cup cherries pitted and halved
  • 12 pieces ladyfingers
  • 2 tablespoons cocoa powder for dusting

Method
 

Prepare the Cream Mixture
  1. In a mixing bowl, whisk together the mascarpone cheese, powdered sugar, and vanilla extract until smooth.
  2. Gently fold in the whipped heavy cream until fully combined.
Prepare the Coffee Mixture
  1. In a shallow dish, combine the cooled coffee and amaretto liqueur.
Assemble the Tiramisu
  1. Dip each ladyfinger into the coffee mixture for about 1-2 seconds, then layer them in the bottom of a 9x9 inch baking dish.
  2. Spread half of the mascarpone mixture over the ladyfingers.
  3. Layer half of the cherries on top of the mascarpone mixture.
  4. Repeat the layers with the remaining ladyfingers, mascarpone mixture, and cherries.
  5. Cover and refrigerate for at least 4 hours, preferably overnight.
Serve
  1. Before serving, dust the top with cocoa powder.
  2. Slice and serve chilled.

Notes
