Ingredients
  

Potatoes
  • 4 medium russet potatoes peeled and diced
Cheese
  • 1 cup cheddar cheese shredded
  • 1 cup pepper jack cheese shredded
Seasoning
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Toppings
  • 1/4 cup green onions sliced
  • 1/4 cup sour cream for serving

Method
 

Prepare the Potatoes
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine the diced potatoes with olive oil, garlic powder, onion powder, paprika, salt, and black pepper. Toss until evenly coated.
Bake the Potatoes
  1. Spread the seasoned potatoes in a single layer in a baking dish.
  2. Bake in the preheated oven for 25-30 minutes, or until the potatoes are tender and golden brown, stirring halfway through.
Add Cheese and Serve
  1. Remove the potatoes from the oven and sprinkle the shredded cheddar and pepper jack cheese over the top.
  2. Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
  3. Garnish with sliced green onions and serve with sour cream.
