Ingredients
  

  • 4 large poblano peppers
  • 3 cups cooked shredded boneless skinless chicken breasts
  • 2 cloves fresh garlic minced
  • 1 cup corn fresh or canned, drained
  • 1 cup cheddar cheese shredded
  • 4 oz cream cheese softened
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. In a skillet over medium heat, cook the chicken until golden brown (about 6 minutes per side). Cool slightly and shred.
  3. In a bowl, combine the shredded chicken, minced garlic, corn, cream cheese, cheddar cheese, cumin, paprika, salt, and pepper until well mixed.
  4. Slice each poblano in half lengthwise and remove seeds. Generously stuff each half with the chicken mixture.
  5. Arrange the stuffed peppers in the baking dish covered with aluminum foil. Bake for 25 minutes; remove foil and bake for an additional 5 minutes until bubbly.
  6. Allow to cool slightly before serving.
