Ingredients
  

Cake
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 tsp vanilla extract
Whipped Cream Topping
  • 1 cup heavy cream chilled
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
Fresh Berries
  • 1 cup strawberries sliced
  • 1 cup blueberries
  • 1 cup raspberries

Method
 

Cake Preparation
  1. Preheat the oven to 350°F (175°C). Grease and flour a baking pan.
  2. In a mixing bowl, combine flour, sugar, baking powder, and salt.
  3. Add softened butter, eggs, milk, and vanilla extract. Mix until smooth.
  4. Pour the batter into the prepared baking pan and smooth the top.
  5. Bake for 25 minutes or until a toothpick inserted in the center comes out clean.
  6. Allow the cake to cool completely in the pan before transferring to a wire rack.
Whipped Cream and Assembly
  1. In a mixing bowl, whip the chilled heavy cream with powdered sugar and vanilla extract until soft peaks form.
  2. Once the cake is cooled, spread the whipped cream evenly over the top.
  3. Decorate with fresh berries on top of the whipped cream.
  4. Slice and serve immediately, or refrigerate until ready to serve.

Notes

For best results, use fresh, seasonal berries. You can also add a layer of berry compote between the cake and whipped cream for extra flavor.
