Ingredients
  

Crust
  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter melted
Carrot Cake Layer
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup grated carrots
  • 1/2 cup chopped walnuts optional
Cheesecake Layer
  • 16 ounces cream cheese softened
  • 1/2 cup sour cream
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
Frosting
  • 8 ounces cream cheese softened
  • 1/4 cup unsalted butter softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Method
 

Prepare the crust
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan.
Make the carrot cake layer
  1. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  2. In another bowl, mix together vegetable oil, eggs, grated carrots, and walnuts (if using). Combine wet and dry ingredients until just mixed.
  3. Pour the carrot cake batter over the crust in the springform pan and spread evenly.
Make the cheesecake layer
  1. In a mixing bowl, beat the softened cream cheese until smooth. Add sour cream, sugar, and vanilla extract, mixing until combined.
  2. Add eggs one at a time, mixing on low speed until just blended. Pour the cheesecake batter over the carrot cake layer.
Bake
  1. Bake in the preheated oven for 60 minutes or until the center is set. Allow to cool at room temperature, then refrigerate for at least 4 hours or overnight.
Prepare the frosting
  1. In a mixing bowl, beat together softened cream cheese and butter until creamy. Gradually add powdered sugar and vanilla extract, mixing until smooth.
Frost and serve
  1. Once chilled, remove the cheesecake from the springform pan and frost the top with the cream cheese frosting. Slice and serve.
