Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 cup grated carrots about 2 medium carrots
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 2 large eggs room temperature
  • ½ cup vegetable oil
  • 4 oz cream cheese softened
  • ¼ cup butter softened
  • 1 cup powdered sugar

Method
 

  1. Preheat your oven to 350°F (175°C) and prepare an 8x8 inch baking pan by greasing it or lining it with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and a pinch of salt.
  3. In another bowl, beat eggs and oil until well combined. Stir in grated carrots.
  4. Pour the wet mixture into the dry ingredients and mix gently until just combined.
  5. Transfer batter to the prepared pan and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  6. For the frosting: Beat cream cheese and butter together until creamy. Gradually add powdered sugar until desired sweetness is reached.
  7. Allow bars to cool before frosting generously.
