Ingredients
  

  • 8 oz spaghetti
  • 4 oz pancetta diced
  • 2 large eggs
  • 1 cup freshly grated Parmesan cheese
  • 1 tsp freshly cracked black pepper
  • 2 cloves garlic minced (optional)
  • Salt to taste

Method
 

  1. Cook the spaghetti in a large pot of salted boiling water until al dente, about 8-10 minutes. Reserve 1 cup of pasta water before draining.
  2. In a skillet over medium heat, cook the diced pancetta until crispy and golden brown, approximately 5-7 minutes.
  3. In a bowl, whisk together the eggs and Parmesan cheese until well combined; add black pepper.
  4. Add the drained spaghetti to the skillet with pancetta, tossing to combine.
  5. Remove from heat and quickly pour in the egg mixture while tossing continuously to create a creamy sauce. Add reserved pasta water gradually for desired consistency.
  6. Serve immediately with additional Parmesan and black pepper on top.
