Ingredients
  

  • 1 cup popcorn kernels yields approximately 8-10 cups popped
  • ½ cup unsalted butter
  • 1 cup granulated sugar
  • ½ cup light corn syrup
  • 1 tsp vanilla extract
  • ½ cup pecans or peanuts optional

Method
 

  1. Pop the popcorn using an air popper or on the stove with minimal oil. Place in a large bowl.
  2. In a medium saucepan over medium heat, melt the butter. Stir in sugar and corn syrup until bubbly.
  3. Remove from heat and stir in vanilla extract.
  4. Pour the warm caramel over popped popcorn, folding gently to coat evenly. Add nuts if desired.
  5. While still warm, shape into golf ball-sized balls and place on wax paper to cool completely.
