Prepare the Cookie Base
- Preheat the oven to 350°F (175°C). Grease and line a baking dish with parchment paper.
- In a mixing bowl, combine flour, cocoa powder, sugar, baking powder, and salt.
- Add softened butter, egg, and vanilla extract. Mix until a dough forms.
- Press the dough evenly into the prepared baking dish.
- Bake for 15-20 minutes or until set. Allow to cool completely.
Add Topping
- In a saucepan over medium heat, combine toasted coconut and caramel sauce. Stir until well combined.
- Spread the coconut-caramel mixture evenly over the cooled cookie base.
- Melt the dark chocolate in a double boiler. Drizzle over the coconut topping.
- Chill in the refrigerator until set, then cut into bars.
