Ingredients
  

Cookie Base
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter softened
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
Topping
  • 1 cup sweetened shredded coconut toasted
  • 1/2 cup caramel sauce store-bought or homemade
  • 1/2 cup dark chocolate chopped

Method
 

Prepare the Cookie Base
  1. Preheat the oven to 350°F (175°C). Grease and line a baking dish with parchment paper.
  2. In a mixing bowl, combine flour, cocoa powder, sugar, baking powder, and salt.
  3. Add softened butter, egg, and vanilla extract. Mix until a dough forms.
  4. Press the dough evenly into the prepared baking dish.
  5. Bake for 15-20 minutes or until set. Allow to cool completely.
Add Topping
  1. In a saucepan over medium heat, combine toasted coconut and caramel sauce. Stir until well combined.
  2. Spread the coconut-caramel mixture evenly over the cooled cookie base.
  3. Melt the dark chocolate in a double boiler. Drizzle over the coconut topping.
  4. Chill in the refrigerator until set, then cut into bars.

Notes
