Ingredients
  

For the Candied Kiwi
  • 4 medium kiwis peeled and cut into wedges
  • 1 cup granulated sugar
  • 1/2 cup water
  • 1 tablespoon lemon juice freshly squeezed

Method
 

Prepare the Kiwis
  1. Skewer the kiwi wedges onto the skewers, leaving space between each piece.
Make the Sugar Syrup
  1. In a saucepan, combine the granulated sugar and water. Heat over medium heat, stirring until the sugar dissolves.
  2. Bring the mixture to a boil and cook until it reaches 300°F (hard crack stage) on a candy thermometer.
  3. Remove from heat and stir in the lemon juice.
Coat the Kiwis
  1. Quickly dip each skewer of kiwi into the hot sugar syrup, ensuring they are fully coated.
  2. Place the coated kiwi skewers on parchment paper to cool and harden.

Notes
