Ingredients
  

  • 2 medium English cucumbers thinly sliced
  • 1 ripe avocado diced
  • 1 cup surimi imitation crab, chopped
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 2 green onions thinly sliced
  • 1 tbsp toasted sesame seeds for garnish

Method
 

  1. Wash and slice the cucumbers into thin rounds or half-moons. Dice the avocado into bite-sized pieces.
  2. In a large bowl, combine sliced cucumbers, diced avocado, and chopped surimi gently to avoid mashing the avocado.
  3. In a separate bowl, whisk together soy sauce, sesame oil, rice vinegar, and a pinch of salt.
  4. Pour the dressing over the cucumber mixture and toss lightly until all ingredients are coated.
  5. Add sliced green onions on top and give it another gentle toss.
  6. Transfer to a serving dish and sprinkle toasted sesame seeds before serving.
