Preparation
- Whisk warm water, yeast, and sugar together in a bowl and cover. Allow to sit for 5 minutes until foamy.
- Add salt, melted butter, and 3 cups of flour. Beat on low speed for 1 minute, then add 3/4 cup of flour and continue mixing until the dough pulls away from the sides, about 2 minutes.
- If the dough is extremely sticky, add remaining 1/4 cup of flour and continue beating for 1 more minute.
- Knead the dough in the mixer for an additional 5 minutes, or by hand on a floured surface until soft and slightly tacky.
- Cover dough lightly and allow it to rest for 10-30 minutes.
Cooking
- Preheat the oven to 400°F (204°C) and line baking sheets with parchment paper or silicone baking mats.
- Cut the dough into 6 equal pieces. Roll each piece into a 20-inch rope and cut into 1.5 – 2 inch pieces.
- Mix water and baking soda in a large pot, bring to a boil. Place 8-10 pretzel bites into the boiling water for 10-15 seconds, then lift out and drain.
- Place bites on prepared baking sheets and sprinkle each with coarse sea salt.
- Bake for 15 minutes or until golden brown. Serve warm.
