  • 1 tablespoon lime juice (optional)
  • 1 gallon orange juice (freshly squeezed)
  • 1 gallon coffee (brewed)

Method

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together 12 large eggs (beaten), 1 cup milk, 1 teaspoon salt, and 1 teaspoon black pepper.
  3. Stir in 2 cups shredded cheese, 1 cup diced bell peppers, and 1 cup diced onions until well combined.
  4. Pour the egg mixture into a greased baking dish and bake for 30-35 minutes until set and golden on top.
  5. Mix in a large bowl, combining 2 cups all-purpose flour, 2 tablespoons sugar, 1 tablespoon baking powder, 1 teaspoon baking soda, and 1 teaspoon salt.
  6. Whisk together in another bowl, combining 2 cups buttermilk, 2 large eggs (beaten), and 1/4 cup melted butter.
  7. Gently combine the wet and dry ingredients until just mixed to keep your pancakes fluffy!
  8. Heat a skillet over medium heat and pour batter to form pancakes.
  9. Cook until bubbles form on the surface—about 2-3 minutes—then flip them over and cook until golden brown.
  10. Combine in a large bowl, mixing together 2 cups strawberries (sliced), 2 cups blueberries, 2 cups grapes (halved), and 2 cups melon (cubed).
  11. Drizzle with honey and lime juice if desired, tossing gently to coat.
