Ingredients
  

Muffin Batter
  • 1 cup mashed sweet potatoes cooked and cooled
  • 1/2 cup brown butter cooled
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
Cream Cheese Filling
  • 8 ounces cream cheese softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Method
 

Prepare the Muffin Batter
  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a mixing bowl, combine the mashed sweet potatoes, brown butter, granulated sugar, eggs, and vanilla extract. Mix until smooth.
  3. In another bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
Make the Cream Cheese Filling
  1. In a separate bowl, beat together the cream cheese, powdered sugar, and vanilla extract until smooth.
Assemble and Bake
  1. Spoon a layer of muffin batter into each muffin cup, followed by a dollop of cream cheese filling, then top with more muffin batter.
  2. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  3. Allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
