- Cook the macaroni in salted water until al dente; drain and set aside.
- In a saucepan over medium heat, melt butter. Whisk in flour and cook for about two minutes.
- Gradually stir in milk until thickened (approximately five minutes).
- Remove from heat and stir in cheeses until melted. Season to taste.
- Combine cooked macaroni with brisket in a large bowl, pour cheese sauce over it, and mix well.
- Transfer to a greased baking dish and bake at 350°F (175°C) for 25 minutes or until bubbly.
