Ingredients
  

  • 3 lbs chicken wings
  • 1 tbsp kosher salt
  • 1 tbsp baking powder
  • 3 tbsp cooking oil (divided)
  • 2 tsp garlic powder
  • BBQ rub (optional)
  • wing sauce (optional)

Method
 

  1. Pre-Season: Pat the chicken wings dry with a paper towel. Place them in a large bowl and toss with salt, baking powder and garlic powder. Refrigerate uncovered overnight.
  2. Heat Griddle: Heat the griddle to medium heat.
  3. Sear: Toss the wings with 1 tablespoon oil. Add to the griddle.
  4. Cook: Continue cooking for 25-30 minutes, adding more oil if needed. Flip the wings often to get evenly crispy skin.
  5. Final Temp: Once the wings hit an internal temperature of 165F degrees, they're cooked through, but I recommend cooking them to 195-205F for the best texture.
  6. Finish: For plain wings, remove from grill and serve. For seasoned wings, add a bit of your favorite seasoning or wing sauce and cook for another 3-5 minutes, flipping often.
