Ingredients
  

Cake Layers
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter softened
  • 1 cup milk room temperature
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
Cheesecake Filling
  • 16 oz cream cheese softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs room temperature
  • 1 cup blueberries fresh or frozen
Topping
  • 1 cup blueberries fresh
  • 2 tbsp granulated sugar
  • 1 tbsp lemon juice

Method
 

Cake Preparation
  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a mixing bowl, combine flour, sugar, baking powder, and salt.
  3. Add softened butter, milk, eggs, and vanilla extract. Beat on medium speed until smooth.
  4. Divide the batter evenly between the prepared pans.
  5. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  6. Let the cakes cool in the pans for 10 minutes, then remove from pans and cool completely on a wire rack.
Cheesecake Filling
  1. In a mixing bowl, beat the softened cream cheese and sugar until smooth.
  2. Add vanilla extract and eggs, mixing until fully incorporated.
  3. Gently fold in the blueberries.
  4. Pour the cheesecake filling over one of the cooled cake layers.
  5. Place the second cake layer on top and refrigerate for at least 4 hours or overnight.
Topping Preparation
  1. In a small saucepan, combine fresh blueberries, sugar, and lemon juice.
  2. Cook over medium heat until the blueberries start to burst and the mixture thickens, about 5-7 minutes.
  3. Let cool slightly before pouring over the cheesecake cake.
Serving
  1. Slice the cheesecake cake and serve with the blueberry topping.

Notes
