Ingredients
  

  • 3-4 boneless skinless chicken breasts
  • 4 slices thick-cut bacon
  • 4 cups romaine lettuce
  • 1 cup cherry tomatoes
  • 1/2 red onion
  • 1/2 cup mayonnaise
  • 2 tbsp lemon juice

Method
 

  1. Preheat your oven to 400°F (200°C). Season the chicken breasts with salt and pepper, then bake for 20-25 minutes until cooked through. Let cool before slicing.
  2. Meanwhile, cook the bacon in a skillet over medium heat until crispy. Drain on paper towels and crumble.
  3. Chop the romaine lettuce, halve the cherry tomatoes, and thinly slice the red onion.
  4. In a bowl, whisk together mayonnaise and lemon juice for the dressing.
  5. In a large bowl, combine lettuce, tomatoes, onion, crumbled bacon, and sliced chicken. Toss with dressing until well coated.
