Method
- In a small bowl, combine Cajun seasoning ingredients or use store-bought seasoning.
- Pat the salmon fillets dry with paper towels. Rub each fillet with olive oil and coat evenly with Cajun seasoning on all sides.
- Preheat a cast-iron skillet over medium-high heat for about 5 minutes. Add a drizzle of olive oil to prevent sticking.
- Place the salmon skin-side down in the skillet and cook undisturbed for 4-5 minutes until a blackened crust forms. Flip gently and cook for an additional 3-4 minutes.
- Check for doneness; the salmon should be opaque and flake easily with a fork. Remove from heat.
- Serve immediately with lemon wedges.
