Ingredients
  

Beans
  • 2 cups black beans cooked or canned
Vegetables
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 medium bell pepper chopped
  • 1 cup tomatoes diced
Spices
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Liquid
  • 1 cup vegetable broth
Garnish
  • 1/4 cup cilantro chopped
  • 1 lime lime wedges for serving

Method
 

Cooking the Beans
  1. If using dried black beans, soak them overnight and cook them until tender. If using canned, rinse and drain them.
Sautéing Vegetables
  1. In a pot, heat a tablespoon of oil over medium heat. Add the chopped onion and bell pepper, and sauté until softened, about 5 minutes.
  2. Add the minced garlic and sauté for another minute until fragrant.
Combining Ingredients
  1. Stir in the diced tomatoes, cooked black beans, cumin, chili powder, salt, and black pepper.
  2. Pour in the vegetable broth and bring to a simmer. Cook for about 20 minutes, stirring occasionally.
Serving
  1. Remove from heat and stir in chopped cilantro. Serve warm with lime wedges.
