Ingredients
  

  • 2 lbs beef chuck roast
  • 4 dried guajillo chiles
  • 1 cup chopped onions divided
  • 1/2 cup fresh cilantro for garnish
  • 10 corn tortillas
  • 6 garlic cloves
  • 2 bay leaves
  • 1 tsp cumin powder
  • Salt to taste
  • Olive oil for searing
  • Water as needed

Method
 

  1. Gather all ingredients. Remove stems from guajillo chiles and soak them in hot water until soft.
  2. In a blender, combine soaked chiles, garlic, cumin, bay leaves, salt, and enough water to create a smooth marinade.
  3. Heat olive oil in a large pot over medium heat. Sear the beef on all sides until browned.
  4. Pour the marinade over the beef and add chopped onions and enough water to cover. Bring to a simmer and cover.
  5. Reduce heat to low and let it cook for about 3 hours until the beef is fork-tender.
  6. Shred the beef with two forks. Warm corn tortillas on a skillet, then fill each with shredded beef topped with cilantro and onions.
  7. Serve with the rich broth for dipping.
