- Cut the beef chuck roast into 3-inch chunks and season generously with salt and pepper. Sear in a large pot over medium-high heat until browned on all sides.
- Toast the dried guajillo peppers in a skillet for about 2 minutes until fragrant.
- Blend the toasted peppers with chopped onion, garlic, lime juice, and 1 cup of beef broth until smooth.
- Pour the pepper mixture back into the pot with the seared meat and add enough broth to cover everything. Simmer on low heat for about 3 hours until the meat is fork-tender.
- Shred the meat using two forks. Warm corn tortillas in a skillet, fill them with shredded beef, top with cilantro and diced onions, and serve with consomé on the side.
