Ingredients
  

  • 2 lbs beef chuck roast
  • 4 dried guajillo peppers
  • 1 medium onion chopped
  • 4 garlic cloves minced
  • 1 cup fresh cilantro chopped (for topping)
  • 4 cups low-sodium beef broth
  • Juice of 2 limes

Method
 

  1. Cut the beef chuck roast into 3-inch chunks and season generously with salt and pepper. Sear in a large pot over medium-high heat until browned on all sides.
  2. Toast the dried guajillo peppers in a skillet for about 2 minutes until fragrant.
  3. Blend the toasted peppers with chopped onion, garlic, lime juice, and 1 cup of beef broth until smooth.
  4. Pour the pepper mixture back into the pot with the seared meat and add enough broth to cover everything. Simmer on low heat for about 3 hours until the meat is fork-tender.
  5. Shred the meat using two forks. Warm corn tortillas in a skillet, fill them with shredded beef, top with cilantro and diced onions, and serve with consomé on the side.
