Ingredients

Meat
  • 2 pounds beef chuck roast
  • 1 pound bone-in beef shank
Marinade
  • 3 dried guajillo chiles stemmed and seeded
  • 2 dried ancho chiles stemmed and seeded
  • 1 tablespoon cumin seeds toasted
  • 1 tablespoon oregano dried
  • 4 cloves garlic minced
  • 1 teaspoon black pepper ground
  • 1 teaspoon salt
  • 2 cups beef broth
  • 1 tablespoon apple cider vinegar
Toppings
  • 1 cup chopped onion
  • 1 cup chopped cilantro
  • 1 lime cut into wedges
  • 4 corn tortillas for serving

Method

Prepare the Marinade
  1. In a dry skillet, toast the guajillo and ancho chiles until fragrant, about 2-3 minutes. Remove from heat and soak in hot water for 15 minutes.
  2. In a blender, combine the soaked chiles, cumin, oregano, garlic, black pepper, salt, beef broth, and apple cider vinegar. Blend until smooth.
Marinate the Meat
  1. In a large bowl, combine the beef chuck roast and bone-in beef shank with the marinade. Cover and refrigerate for at least 2 hours, preferably overnight.
Cook the Birria
  1. Preheat the Dutch oven over medium heat. Add the marinated meat and any remaining marinade. Cover and cook on low for about 4 hours, or until the meat is tender and easily shredded.
Serve
  1. Shred the meat and serve in bowls with the broth. Top with chopped onion, cilantro, and lime wedges. Serve with warm corn tortillas.
