Ingredients
  

  • 2 lbs russet potatoes thinly sliced
  • 2 cups heavy cream
  • 2 cups sharp cheddar cheese shredded
  • 1 small onion finely chopped
  • 3 cloves garlic minced
  • 4 tbsp butter plus more for greasing
  • Salt & pepper to taste

Method
 

  1. Preheat your oven to 375°F (190°C) and grease a baking dish with butter.
  2. In a skillet over medium heat, melt butter and sauté onion and garlic until translucent.
  3. In a bowl, combine heavy cream with salt and pepper; mix in half of the sautéed onion and garlic.
  4. Layer half of the potato slices in the baking dish, pour half of the cream mixture over them, then sprinkle half of the cheese. Repeat layers with remaining ingredients.
  5. Cover with foil (shiny side down) and bake for 45 minutes. Remove foil and bake for an additional 20-30 minutes until golden brown.
