Ingredients
  

Filling
  • 2 cups beet greens fresh, vibrant
  • 1 lb ground meat beef or pork
  • 1 cup rice uncooked
  • 1 medium onion finely chopped
  • 2 cloves garlic freshly minced
  • 1 can crushed tomatoes
  • 2 tbsp lemon juice fresh
  • 1 tbsp dill
  • 1 tbsp paprika
  • to taste salt
  • to taste pepper

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a baking dish with olive oil.
  2. Heat olive oil in a large skillet over medium heat. Add chopped onions and sauté until golden brown and fragrant.
  3. Toss in minced garlic followed by chopped beet greens. Sauté until the greens wilt down but still hold their vibrant color.
  4. In a bowl, combine ground meat, cooked rice, sautéed onion mixture, lemon juice, dill, paprika, salt, and pepper. Mix well until everything is evenly incorporated.
  5. Take a generous spoonful of filling and wrap it in beet greens like a burrito. Place each wrapped goluptsy seam-side down in your greased baking dish.
  6. Pour crushed tomatoes over the wrapped goluptsy generously. Cover with aluminum foil and bake for 30 minutes until heated through.
