Ingredients
  

Chicken
  • 1 whole whole chicken about 4-5 pounds
Beer
  • 1 can lager or ale 12 oz
Rub
  • 2 tablespoons olive oil for coating
  • 1 tablespoon paprika smoked or sweet
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon black pepper freshly ground
  • 1 teaspoon salt
  • 1 teaspoon cayenne pepper optional for heat

Method
 

Preparation
  1. Preheat the grill to medium heat (about 350°F).
  2. In a small bowl, mix together the olive oil, paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper to create the rub.
  3. Pat the chicken dry with paper towels and rub the spice mixture all over the chicken, including under the skin.
  4. Open the beer can and drink or pour out half of the beer. Place the can inside the beer can holder.
  5. Insert the beer can into the cavity of the chicken, ensuring it stands upright.
Grilling
  1. Place the chicken on the grill over indirect heat (not directly over the flames).
  2. Cover the grill and cook for about 1.5 hours, or until the internal temperature reaches 165°F in the thickest part of the thigh.
  3. Remove the chicken from the grill and let it rest for 10-15 minutes before carefully removing the beer can.
  4. Carve and serve the chicken warm.
