- Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
- In a skillet over medium heat, brown the ground beef for about 5-7 minutes. Drain excess fat and add chopped onions and cumin; cook until onions soften.
- Spoon the beef mixture onto each tortilla, roll tightly, and place seam-side down in the baking dish.
- Pour red enchilada sauce generously over the rolled tortillas and sprinkle with both shredded cheeses.
- Bake for approximately 20 minutes or until the cheese is bubbly and golden brown.
- Garnish with sour cream and cilantro before serving.
