Ingredients
  

  • 1 lb lean ground beef
  • 6 large flour tortillas
  • 2 cups red enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 medium onion chopped
  • 1 tsp cumin
  • ½ cup sour cream for topping
  • ¼ cup fresh cilantro chopped (for garnish)

Method
 

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a skillet over medium heat, brown the ground beef for about 5-7 minutes. Drain excess fat and add chopped onions and cumin; cook until onions soften.
  3. Spoon the beef mixture onto each tortilla, roll tightly, and place seam-side down in the baking dish.
  4. Pour red enchilada sauce generously over the rolled tortillas and sprinkle with both shredded cheeses.
  5. Bake for approximately 20 minutes or until the cheese is bubbly and golden brown.
  6. Garnish with sour cream and cilantro before serving.
