Beef and Cheese Chimichangas

Crispy, deep-fried tortillas filled with seasoned beef and melted cheese, served with salsa and sour cream.

Ingredients
  

Filling
  • 1 lb ground beef or shredded beef
  • 1 cup cheddar cheese shredded
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp salt
  • 1 tsp black pepper
  • 4 large flour tortillas
For frying
  • 2 cups vegetable oil for frying
To serve
  • 1 cup sour cream
  • 1 cup salsa
  • 1 cup guacamole

Method
 

Prepare the filling
  1. In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Add onion and garlic to the skillet and sauté until softened.
  3. Stir in chili powder, cumin, salt, and black pepper. Mix well and remove from heat.
  4. Add shredded cheddar cheese to the beef mixture and stir until melted.
Assemble the chimichangas
  1. Place a generous amount of the beef and cheese filling in the center of each tortilla.
  2. Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom.
  3. Secure with toothpicks if necessary.
Fry the chimichangas
  1. Heat vegetable oil in a deep fryer to 350°F (175°C).
  2. Carefully place chimichangas in the hot oil, a few at a time, and fry until golden brown, about 3-4 minutes per side.
  3. Remove from oil and drain on paper towels.
Serve
  1. Serve hot with sour cream, salsa, and guacamole on the side.

Notes

For a healthier option, you can bake the chimichangas at 400°F (200°C) for 20-25 minutes instead of frying.
