Ingredients
  

  • 4 slices thick-cut bacon
  • 1 medium onion diced
  • 2 garlic cloves minced
  • 2 cans 15 oz each navy or great northern beans, drained and rinsed
  • 4 cups low-sodium chicken broth
  • 1 cup carrots diced
  • 1 cup celery chopped
  • 1 tsp dried thyme
  • Salt and pepper to taste

Method
 

  1. Cook the bacon in a large pot over medium heat until crispy. Remove the bacon but leave the fat in the pot.
  2. Sauté the onions, garlic, carrots, and celery in the bacon fat for about five minutes until softened.
  3. Add the drained beans and chicken broth to the pot; stir to combine.
  4. Season with thyme, salt, and pepper. Bring to a simmer and reduce heat to low.
  5. Let it cook gently for about 20 minutes to allow flavors to meld.
  6. Stir in reserved bacon bits before serving hot.
