BBQ Chicken Sides

Ingredients
  

Coleslaw
  • 4 cups shredded cabbage
  • 1 cup carrots shredded
  • 1 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Baked Beans
  • 2 cans baked beans 15 oz each
  • 1 cup onion chopped
  • 1 tablespoon brown sugar
  • 2 tablespoons BBQ sauce
  • 1 teaspoon mustard
Corn on the Cob
  • 4 ears corn husked
  • 4 tablespoons butter for serving
  • 1 teaspoon salt for serving

Method
 

Coleslaw Preparation
  1. In a large mixing bowl, combine shredded cabbage and carrots.
  2. In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper.
  3. Pour the dressing over the cabbage mixture and toss to combine. Refrigerate for at least 30 minutes before serving.
Baked Beans Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a saucepan, sauté the chopped onion until translucent.
  3. Add the baked beans, brown sugar, BBQ sauce, and mustard. Stir to combine.
  4. Transfer the mixture to a baking dish and bake for 30 minutes.
Corn on the Cob Preparation
  1. Bring a large pot of salted water to a boil.
  2. Add the husked corn and cook for 5-7 minutes until tender.
  3. Remove from water and serve with butter and salt.
