Ingredients
  

Brisket
  • 4 pounds beef brisket preferably flat cut
Rub
  • 2 tablespoons brown sugar
  • 1 tablespoon paprika
  • 1 tablespoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon cayenne pepper optional for heat
  • 1 tablespoon salt
Wood Chips
  • 2 cups hickory or oak wood chips soaked in water for 30 minutes

Method
 

Preparation
  1. Preheat the smoker to 225°F (107°C).
  2. In a small bowl, mix together all the rub ingredients.
  3. Rub the mixture all over the brisket, ensuring it is evenly coated.
  4. Let the brisket sit at room temperature for 30 minutes to absorb the flavors.
Smoking
  1. Place the soaked wood chips in the smoker.
  2. Put the brisket on the smoker grates, fat side up.
  3. Smoke the brisket for about 5-6 hours, or until it reaches an internal temperature of 195°F (90°C).
  4. Wrap the brisket in aluminum foil and let it rest for at least 30 minutes before slicing.
Serving
  1. Slice the brisket against the grain and serve with your favorite BBQ sauce.
