Ingredients
  

  • 1 medium head cauliflower about 500g
  • 2 large eggs
  • ½ cup grated Parmesan cheese
  • 1 cup all-purpose flour or gluten-free flour
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 2 tbsp olive oil for frying

Method
 

  1. Steam the cauliflower florets until tender, about 5-7 minutes. Allow cooling slightly.
  2. In a large bowl, mash the steamed cauliflower until chunky but cohesive.
  3. Mix in eggs, Parmesan cheese, flour, garlic powder, salt, and pepper until well combined.
  4. Heat olive oil in a skillet over medium heat.
  5. Drop two tablespoons of batter into the skillet and flatten slightly. Cook for about 3 minutes on each side until golden brown.
  6. Transfer fritters to paper towels to drain excess oil and serve warm with sour cream or Greek yogurt.
