Ingredients
  

  • 1 ½ cups graham cracker crumbs
  • 6 tbsp unsalted butter melted
  • cup granulated sugar for crust
  • 16 oz cream cheese softened
  • 1 cup sour cream
  • 1 cup heavy whipping cream
  • 3 ripe bananas sliced
  • 2 tsp vanilla extract
  • 1 tbsp gelatin powder

Method
 

  1. Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, melted butter, and sugar. Press into the bottom of a springform pan.
  2. Bake the crust for 10 minutes until golden. Allow it to cool completely.
  3. Beat cream cheese until smooth. Gradually mix in sour cream and vanilla extract; add sugar until fluffy.
  4. Gently fold in banana slices into the cheesecake mixture.
  5. Pour half of the mixture over the cooled crust, spread evenly, then add remaining mixture on top. Smooth out lumps.
  6. Cover with plastic wrap and chill for at least 4 hours or overnight before serving.
