  • 2 medium zucchini thinly sliced
  • 4 cups fresh spinach or 2 cups frozen
  • 1 cup crumbled feta cheese
  • 3 large eggs
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a skillet, heat olive oil over medium heat. Sauté zucchini for about 5 minutes until softened, then add spinach until wilted.
  3. In a bowl, whisk eggs with crumbled feta, then mix in the sautéed vegetables, oregano, salt, and pepper.
