Ingredients
  

  • 2 medium zucchinis sliced
  • 4 cups fresh spinach
  • 1 cup crumbled feta cheese
  • 3 large eggs
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a large bowl, combine the sliced zucchini and fresh spinach.
  3. In another bowl, whisk together the eggs, olive oil, garlic powder, salt, and pepper until smooth.
  4. Fold the zucchini-spinach mixture and crumbled feta into the egg mixture until evenly coated.
