Ingredients
  

  • 1 lb large shrimp deveined
  • 2 ripe avocados diced
  • 1 cup sweet corn freshly grilled or canned
  • 1 cup cherry tomatoes halved
  • 1/4 red onion finely diced
  • Juice of 2 limes
  • 2 tbsp olive oil
  • Salt and pepper to taste

Method
 

  1. Preheat grill to medium-high heat. Toss shrimp in olive oil, salt, and pepper; thread onto skewers.
  2. Grill shrimp for 2-3 minutes per side until pink and opaque; remove from heat and cool slightly before removing from skewers.
  3. While shrimp cools, chop avocados and cherry tomatoes; finely dice red onion.
  4. In a large bowl, combine corn, avocados, tomatoes, onions; gently fold in grilled shrimp.
  5. Drizzle lime juice over salad; toss gently to combine.
  6. Serve immediately with extra lime wedges as garnish.
