  • 2 lbs beef chuck roast cut into bite-sized pieces
  • 1 large onion finely chopped
  • 4-6 cloves garlic minced
  • 2 tbsp tomato paste
  • 1 tbsp coriander seeds crushed
  • ½ cup uncooked rice white or brown
  • 2 bay leaves
  • Salt and pepper to taste

Method
 

  1. In a large pot over medium heat, sauté chopped onions in oil until translucent (about 5 minutes). Add minced garlic and sauté until fragrant.
  2. Add the beef chuck pieces and brown on all sides (approximately 8 minutes).
  3. Stir in tomato paste and crushed coriander seeds; cook for an additional 3 minutes.
  4. Pour in enough water or beef broth to cover the meat by at least an inch. Bring to a boil, then reduce heat to simmer.
  5. Add bay leaves and rice; cover partially and simmer for about 1 hour or until the beef is tender.
  6. Adjust seasoning with salt and pepper before serving; remove bay leaves.
