Ingredients
  

  • 2 English cucumbers approximately 1 lb, thinly sliced
  • 1/4 cup rice vinegar
  • 2 tbsp granulated sugar
  • 1 tbsp sesame oil
  • 2 green onions chopped
  • 1 tbsp toasted sesame seeds

Method
 

  1. Wash and thinly slice the English cucumbers using a sharp knife or mandoline.
  2. In a bowl, whisk together rice vinegar, sugar, and sesame oil until the sugar dissolves.
  3. In a large mixing bowl, combine sliced cucumbers with chopped green onions and sesame seeds. Pour the dressing over the salad and mix gently.
  4. Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.
  5. Serve chilled, garnished with extra sesame seeds if desired.
