Ingredients
  

  • 3 boneless skinless chicken breasts (about 1.5 lbs)
  • 4 cups mixed greens romaine and spinach
  • 2 cups shredded cabbage green or purple
  • 1 cup grated carrots
  • 1 cup sliced bell peppers any color
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp honey or maple syrup

Method
 

  1. Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat; cook chicken for about 6 minutes per side until golden brown and cooked through. Let rest before slicing.
  2. Chop mixed greens, shred cabbage, grate carrots, and slice bell peppers into thin strips.
  3. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, and honey until combined.
  4. In a large bowl, combine chopped veggies and sliced chicken. Drizzle with dressing and toss gently until everything is coated.
  5. Serve immediately, garnished with sesame seeds or chopped green onions if desired.
