Ingredients

Dry Oatmeal Base
  • 2 cups old-fashioned rolled oats
  • 1.5 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tsp baking powder
  • 1/2 tsp fine sea salt
  • 1/2 cup chopped pecans
Fresh Apples
  • 2 medium apples, diced
  • 1 tbsp lemon juice
Wet Custard Mixture
  • 1.75 cups almond milk
  • 2 large large eggs
  • 1/3 cup pure maple syrup
  • 3 tbsp melted butter
  • 1.5 tsp pure vanilla extract

Method

Baking Instructions
  1. Preheat your oven to 375°F (190°C). Lightly grease an 8x8-inch or 9x9-inch ceramic baking dish with cooking spray or butter.
  2. In a large mixing bowl, combine the rolled oats, ground cinnamon, nutmeg, baking powder, sea salt, and half of the chopped pecans. Toss until evenly combined.
  3. In a separate medium bowl, whisk together the almond milk, eggs, pure maple syrup, melted butter, and vanilla extract until smooth.
  4. Scatter two-thirds of the diced apples evenly across the bottom of the prepared baking dish. Pour the dry oat mixture over the apples and gently level the surface.
  5. Slowly pour the wet custard milk mixture over the oats, ensuring all the oats are submerged and saturated. Top with the remaining diced apples and pecans.
  6. Bake uncovered for 35 to 40 minutes, until the top is golden-brown and the center is set to the touch. Remove from oven and let rest for 10 minutes before slicing.
