Ingredients
  

  • 3 medium Granny Smith apples peeled and chopped
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 2 large eggs room temperature
  • 1/2 cup unsalted butter melted
  • 1/2 cup brown sugar for glaze
  • 1/4 cup heavy cream for glaze

Method
 

  1. Preheat your oven to 350°F (175°C) and grease a bundt or cake pan.
  2. Toss chopped apples with cinnamon; set aside.
  3. In a bowl, whisk together flour, baking powder, cinnamon, and salt.
  4. In another bowl, cream melted butter and sugars until fluffy; add eggs one at a time.
  5. Gradually combine dry ingredients into the wet mixture; gently fold in apple chunks.
  6. Pour batter into the prepared pan and bake for 45-50 minutes or until a toothpick comes out clean.
  7. For the glaze, combine brown sugar and heavy cream in a saucepan over medium heat until bubbly (about 5 minutes). Drizzle over cooled cake.
