Ingredients
  

  • 3-4 boneless skinless chicken breasts (about 1 lb)
  • 4 cups cauliflower florets 1 medium head
  • 4 cloves garlic minced
  • 1 medium yellow onion diced
  • 2 medium carrots sliced
  • 4 cups low-sodium vegetable broth
  • 1 cup full-fat coconut milk
  • 1 tsp turmeric powder
  • 1 tsp ground ginger
  • Salt and pepper to taste
  • 2 tbsp olive oil

Method
 

  1. Chop the chicken into bite-sized pieces, dice the onion, mince the garlic, slice the carrots, and cut the cauliflower into florets.
  2. Heat olive oil in a large pot over medium heat. Sauté onions and garlic until fragrant (about 3 minutes).
  3. Add chicken pieces; season with salt and pepper, cooking until browned on all sides (approximately 5 minutes).
  4. Stir in carrots and cauliflower along with turmeric and ginger; mix well.
  5. Pour in vegetable broth; bring to a gentle boil. Reduce heat to low, cover, and simmer for about 20 minutes until vegetables are tender.
  6. Blend the soup until smooth using an immersion blender or regular blender; stir in coconut milk before serving.
